Add a touch of Irish luck to your dinner table with a healthy twist on this traditional St. Patrick’s day dish.
Ingredients:
- 2 1/2 cups whole-wheat flour
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 cups low-fat buttermilk
- 1/4 cup low-fat cup milk
Directions:
Preheat oven to 450°F. Cover a baking sheet with tin foil, which you’ve lightly misted with cooking spray. Whisk dry ingredients in one bowl. Making a well, slowly add buttermilk, then milk. Stir from the center outward until all the dry ingredients are incorporated and soft. If the dough
is too wet, add a bit more flour. Turn the dough out onto a floured surface and flatten with your hands until it s about 2 inches tall. Transfer to baking sheet. bake for 25 minutes. Reduce oven to 385 and continue to bake for another 35 minutes, when the top of the loaf should be brown.
